Chicken Parmesan Pasta
This pasta was the perfect thing to make on a busy Tuesday afternoon and what I loved most about it was that I only used one pot and took 30 minutes! This came out very tasty and this recipe is for approximately 5-6 servings. You can also add more cheese to it to make it even cheesier….who doesn’t love cheese?
2 tablespoons olive oil
2 tablespoons Montreal chicken seasoning
2lbs chicken breast, cut into small pieces
1lb Rigatoni Pasta
1 - 24oz Marinara Sauce
1/3 cup shredded mozzarella cheese
1/3 cup shredded parmesan cheese
Salt, to taste
Pepper, to taste
Chopped basil, for garnish
Heat olive oil in a Dutch oven over medium high heat. Add the chicken, Montreal chicken seasoning and salt and pepper to taste. Cook for about 5 minutes until the chicken has cooked through.
Add the pasta over the chicken and the marinara sauce. Add 1 ½ cup water the pasta. Stir and mix everything well
Bring mixture to a boil, and then reduce to a simmer. Cover the pasta and let it cook for about 13-15 minutes. Make sure to check from time to time how the pasta is cooking you don’t want it to break apart or get soggy.
Once ready, stir the mixture again and top with the mozzarella and Parmesan cheese. Do not stir anymore. Cook for another minute so cheese can melt. To get it crispy on top, you can put in the oven and broil for 3 minutes.
Garnish with Fresh chopped basil and serve!
