Egg, Cheese & Ham Omelet Casserole

First of all this casserole tastes amazing and is perfect for any breakfast or brunch.  You can also modify it and add more stuff if you wish! I made it simple and to the point for a brunch and it was a hit!

(Serves 8)


10 eggs

1 cup of milk

1 teaspoon salt

1 teaspoon pepper

1 cup of shredded cheddar cheese

½ cup of shredded mozzarella cheese

½ lb of diced cooked ham (you can also substitute for bacon or sausage)

½ finely chopped onion

Fresh chives for garnish or fresh parsley



Preheat oven to 375 degrees

Beat eggs, milk and salt together in a large bowl. Stir in cheese, ham and onion.

Pour the mix into a squared or oval baking dish.

Bake for 50 minutes or until eggs are cooked

Top with chives or parsley
