Green Curry Mussels

These are delicious & spicy! you can serve them as an appetizer or as a meal with some crusty bread and white wine. Once you taste these mussels you will want to make them all the time!

Beware they are a little spicy so be careful with the green curry paste! 

(serves 2)


Ingredients: 

2 lbs of mussels
2 tbs olive oil
1/2 onion
4 tablespoons of mined garlic
1 Tablespoon Green Curry Paste (Thai Kitchen has one or any green curry paste you can find at your local asian market)
14 oz  can of Coconut Milk
2 teaspoons of palm sugar
1 cup of chopped cilantro

Directions: 

Clean and Scrub mussels if they are fresh. If they are packaged mussels then you can just rinse them. 

Heat olive oil in a large saucepan on medium high heat. add onions, garlic, and onion and stir for about a minute. Add the green curry paste and half of the coconut milk. Once you have broken down the paste and there are no lumps add the rest of the coconut milk and palm sugar. 

Bring the sauce to a boil and then add mussels and half of the cilantro.  Cover with a lid and cook for about 6-7 min or until mussels open. (Discard any mussels that do not open) 

Serve in bowls and top with the rest of the cilantro. Make sure to scoop up the sauce with the crusty bread!
