Grilled Lamb with Garlic & Rosemary
This recipe was adapted from the food & wine magazine
delicious when served with couscous, green beans or asparagus.
(serves 3-4 people)
2 racks of lamb , ( about 2lbs each)
1 head of garlic, peeled and minced
1/2 cup of fresh rosemary leaves
1/2 cup of extra-virgin olive oil
salt & fresh ground pepper
Grill has to be about 400F.
In a food processor or blender, add the garlic, rosemary leaves and olive oil. Blend or Process still it is a thick paste.
Rub the paste on both sides of the lamb.
Grill for about 7 minutes on each side
Enjoy it with a glass of wine
