Low Carb Turkey Stuffed Peppers

When you are in the mood for something healthy then this is just it! These turkey stuffed peppers are filled with ground turkey, onion, garlic, carrots, red peppers and topped with melted cheese. This is very easy to make and the entire dish will take you about an hour to complete.

Ingredients: 
1lb Extra Lean Ground Turkey
1 teaspoon olive oil
3 small green peppers
½ cup chopped onion
3 tablespoons minced garlic
½ cup chopped carrots
½ cup chopped red pepper
½ cup low sodium chicken broth
¼ cup chopped cilantro
1 teaspoon salt
1 teaspoon pepper
1 teaspoon Italian seasoning
½ cup shredded low fat mozzarella

Instructions:

Heat oven to 400ºF. Lightly coat a skillet with olive oil, heat over medium heat. Add the onion, garlic, carrots and red peppers and sauté for about 3-4 minutes or until softened. Add the ground turkey, salt, pepper and Italian seasoning and cook for about 12 minutes, or until well done. (Make sure you break meat apart, you don’t want to have big chunks) Add ¼ low sodium chicken broth and cilantro and mix well. Let is simmer for about 5-6 minutes.

When food is simmering, cut the bell peppers lengthwise and clean the inside. Place bell peppers in baking dish and spoon in turkey mixture into each pepper half. (If your peppers are small then you will have turkey mixture left over) Pour the remaining ½ cup of chick broth in baking dish. Cover with foil and bake for 30 minutes. Remove from oven and remove foil. Sprinkle cheese and bake for another 3 minutes.
