New England Style Lobster Roll
This lobster roll was very refreshing and tasty perfect for a hot summer day! I know lobster can be expensive and if you want to make more than 2-3 rolls that would be pretty pricey. I used fresh cooked lobster meat, but you can always substitute it for imitation lobster meat. I served the lobster roll with some kettle chips.
1 LB cooked lobster meat (or imitation lobster meat)
½ cup olive oil mayonnaise
2 tablespoons lemon juice
2 teaspoons minced garlic
¼ cup of fresh chopped parsley
2 tablespoons green onions (just the onion)
1-2 teaspoon Tabasco Sauce
Salt, to taste
Fresh ground black pepper, to taste
2 tablespoons melted butter
4 Hot dog rolls or submarine rolls
Kettle chips or French fries, to serve
In a medium size bowl, add the mayonnaise, lemon juice, minced garlic, parsley, green onions and Tabasco sauce. Mix well, and add salt and pepper to taste..
Mix the lobster meat into the mayonnaise mixture and put in the refrigerator to cool for about 10 minutes.
Melt Butter and brush on both sides of the bread.
Heat a skillet at medium high heat. Toast the bread on all sides for about 2 minutes.
Divide lobster salad between the rolls, and serve with a side a kettle chips or fries.
