Stuffed Chicken Breast Wrapped in Bacon

This recipe is very easy to make and everyone will love. Especially if you are a fan of cream cheese and bacon! Who doesn't love those two combinations?

This recipe is good for a weeknight dinner since its not time consuming. Overall it took about 30 minutes set up and cook, and its super easy to make! I served it with green beans and some wild rice.

I apologize for not having a lot of pictures, I was in a hurry and hungry and I forgot to take them!

3 chicken breasts
3 slices of bacon
1 (8oz) box of Philadelphia Cream Cheese
1 tablespoon minced garlic
1 tablespoon dried rosemary
1 teaspoon of paprika
1 teaspoon thyme
1 teaspoon black pepper
Olive oil

Preheat over to 350 F.

In a mixing bowl combine the creme cheese, minced garlic, dried rosemary, paprika, thyme and pepper. Mix well and set aside. (I try to wear gloves and really mix everything in)

Cut chicken in half, butterflied. (you want to make sure you don't cut all the way through, this makes it easier to stuff the chicken and wrap.

Separate the creme cheese in three and stuff into the chicken. Close the chicken and wrap one bacon slice around the chicken and hold with the toothpick. Add the second bacon slice in case the chicken breast is big and secure with toothpick.

Once you have wrapped all 3 chicken breasts, heat up a skillet with a bit of olive oil. Once hot sear the chicken about 2 min per side.

Transfer chicken to baking dish and bake for 15 minutes.

Serve with wild rice and green beans.

Bon Appetite!
