Palak paneer

INGREDIENTS

  • 200 gms. paneer cut into 1 " pieces

  • 500 gms. palak

  • 3/4 teacup oil

  • 2 large onions minced

  • 1/4 piece of coconut

  • a handful of coriander leaves

  • 5-6 green chillies

  • 4 large garlic flakes

  • 2" piece ginger

  • 1 tsp. coriander powder

  • 1 tsp. cumin powder

  • 1/2 tsp. turmeric

  • 3 tbsps. curd

  • 1/4 tsp. garam masala

  • salt to taste

DIRECTIONS

  1. Heat oil and fry the paneer piece till golden brown.

  2. Drain and keep aside. On a slow fire, cook palak without water for 5 minutes.

  3. Cook and grind to a paste.

  4. Heat oil and fry onions till it is soft.

  5. Add masala paste and stir till oil leaves masala. Add turmeric, curd, garam masala and salt, and cook till curd is absorbed. Add palak paste and 1 teacup water.

  6. Cover and cook for 5 minutes on slow fire. Add paneer and remove from fire.

  7. Serve with naan, roti, parath or bread.
