Carrot Cake

  • 150ml vegetable oil

  • 4 large eggs

  • 1 teaspoon vanilla extract

  • 1 1/2 cup self raising flour

  • 1 1/4 cup sugar

  • 100g yogurt

  • 2 teaspoon cinnamon

  • 250g carrots

  • 100g walnuts

For the icing:

  • 1/2 cup butter, softened

  • 1 1/2 cup icing sugar

  • 100g full fat cream cheese

  • 1 teaspoon of heavy cream or milk


  1. Preheat oven to 180 degree C. spray the cake pan with non-stick cooking spray or line it with a parchment paper and set aside.

  2. In a bowl mix together flour, sugar and cinnamon. In another bowl whisk together the oil, yogurt, egg and vanilla. Combine the wet ingredient with the dry, and add carrot and the walnuts to it, Mix well all the ingredients.

  3. Pour the batter into the cake pan and bake it for 1 hr 10 min. Let it cool.

  4. For the icing, beat the sugar and the butter until it comes together and is smooth Add the cream cheese bit by bit. Beat it until soft and smooth.

  5. Remove it from the cake pan and spread the icing over the top of the cake evenly. Sprinkle some confetti over it.
